James McParland, Chef Instructor
An experienced butcher with over 30 years in the hospitality industry, Chef McParland brings a deep respect for the production of proteins and an expectation of excellence to his classroom. A graduate of the American Culinary Federation Apprentice Program, he owned his own retail meat and catering business for six years, and has served as Executive Chef for the Women’s Athletic Club, Covenant Club, Ridgemore Country Club and Evanston Country Club, all in Illinois. Chef McParland teaches Meat Fabrication.
